Traditional rice noodle factories in Phan Thiet serve as family businesses, passed down through generations, with each family preserving their unique recipes and techniques. The region is famous for producing rice noodles, particularly the "bánh hỏi" type, a delicate, thin rice noodle widely enjoyed in Vietnamese cuisine. I had the opportunity to witness the rice noodle-making process firsthand in the villages.
